The Story Behind Craft Cocktails: From Garden to Glass

At Basil & Beans, we don't just mix drinks — we compose them. Every cocktail on our menu is a narrative, a carefully layered story of flavors, aromas, and textures that evolve from the first sip to the last.

Our Philosophy: Intentional Ingredients

The craft cocktail revolution taught the world that quality ingredients matter. At Basil & Beans, we took that lesson further. We maintain a rooftop herb garden where we grow over 15 varieties of herbs and botanicals — Thai basil, lemongrass, butterfly pea flower, lavender, rosemary, and kaffir lime, among others.

Every morning, our bar team harvests what they need. This isn't a marketing gimmick — freshly picked herbs have an aromatic intensity that dried or store-bought alternatives simply cannot replicate. When you muddle a sprig of basil that was growing on our roof 30 minutes ago, you release oils that fill the glass with a vibrancy that defines our cocktails.

House-Made Everything

Walk behind our bar and you'll find rows of mason jars, bottles, and infusion vessels. We make everything in-house:

Syrups — Our simple syrup uses organic jaggery instead of refined sugar, giving cocktails a warmer, more complex sweetness. Our seasonal syrups rotate monthly — mango-cardamom in summer, spiced apple in winter, rose-saffron during festival season.

Bitters — We craft three house bitters: a citrus aromatic with Nagpur orange peels, a smoky bitter with charred coconut and black pepper, and a floral bitter with marigold and chamomile.

Infusions — Our spirits are infused in-house. Vodka rests with cucumber and dill for 72 hours. Gin mingles with fresh kokum for a distinctly Indian twist. Whiskey sleeps with cinnamon and star anise for our winter menu.

Signature Creations

The Garden Mule — Our take on the Moscow Mule features house-made ginger beer (brewed with fresh Assam ginger), garden-picked mint, fresh lime, and vodka infused with lemongrass. Served in a copper mug with a kaffir lime wheel. It's refreshing, botanical, and completely unique to Basil & Beans.

Smoked Negroni — We age our Negroni in small oak barrels for two weeks, then serve it with a dramatic tableside smoke using applewood chips. The smoke infuses the cocktail with a campfire warmth that pairs beautifully with the bitter Campari and sweet vermouth.

Mumbai Sunset — A tribute to our city that uses kokum-infused gin, Alphonso mango puree, lime, and a float of butterfly pea flower tonic that creates a mesmerizing color shift from purple to golden orange.
